Makes 4 servings; 2 hours, 20 min total time
2 cups rolled oats
3 cups coconut milk
1 cup plain Greek yogurt
2 tsp vanilla extract
1 carrot, grated
1/4 cup pineapple, diced
1/4 cup sweetened shredded coconut
1/4 cup finely chopped walnuts (optional)
• 1 tsp cinnamon
• 1/2 tsp nutmeg
1) Add all ingredients to a large bowl, mixing well to combine.
2) Divide the mixture between four 16-oz mason jars. Let chill in the fridge for a minimum of 2 hours before enjoying, preferably overnight.
3) Serve and enjoy!
Can be stored in the fridge to eat as leftovers for 5-6 days and are best enjoyed cold. They cannot be frozen.
